Grilled Peach Melba

Peach Melba (French: pba Melba , pronounced [p ?? m? l.ba] ) is a dessert of peaches and raspberry sauce with vanilla ice cream. This dish was discovered in 1892 or 1893 by French chef, Auguste Escoffier at Savoy Hotel, London, in honor of the Australian soprano, Nellie Melba.

In 1892, soprano singer Nellie Melba appeared in Wagner's opera Lohengrin in Covent Garden. Duke of OrlÃÆ'Ã… ans gave dinner to celebrate his victory. For that occasion, Escoffier created a new dessert, and to display it, he used a goose ice statue, which was featured in the opera. The goose carries a peach that rests on a vanilla ice cream topper and topped with spinning sugar. In 1900, Escoffier made a new version of dessert. For the opening opportunity of the Carlton Hotel, where he is the head chef, Escoffier removes the goose ice and topped the peach with raspberry purà ©.

Variations

Other versions replace pear, apricot, or strawberry instead of peach or use melted raspberry sauce or jelly redcurrant instead of raspberry purà © e. The original plate uses simple ingredients from "soft and very mature peaches, vanilla ice cream, and some sweet raspberries". Escoffier himself was quoted as saying, "Any variation on this recipe undermines the balance of taste."

Cultural significance

As a tribute to Escoffier, the elaborate deconstruction of the Melba peach is presented as the last dish at elBulli before the close of 2012.
